
I spend waaay too much time in the cereal aisle at the grocery store so there was no way this novelty was getting past me. By the way, Honey Nut Cheerios is the BEST cereal of all time. Anyway, with my love for cupcakes and cereal I couldn’t resist picking up this Cupcake Pebbles mash up. I went home super excited to try my discovery and as soon as I opened the box my nose was attacked with the sweet stench of sugar. As if you couldn’t guess, this cereal is SUPER sweet. It’s like sugar on steroids. I assumed it would just have a sugary taste but to my surprise it actually tastes like Funfetti Cake. It got soggy way too fast and that’s a huge pet peeve for me when it comes to cereal. I knew a second bowl was not in my future. Being that I will do everything possible not to waste food I knew I needed an alternative to just adding milk. So what do you do to something that is too sweet? Make it sweeter of course! I give you Cupcake Rice Krispie Treats.
WHAT YOU NEED:
3 tablespoons butter or margarine
1 package (10 oz., about 40) regular marshmallows
OR
4 cups miniature marshmallows (these melt faster)
6 cups Cupcake Pebbles
Baking Spray
Mini Cupcake Pan
Saran Wrap

1. In a large saucepan (I prefer a large pot) melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.


2. Add Cupcake Pebbles or breakfast cereal of your choice and stir until well coated. I find adding two cups at a time make it easier to mix and get an even coat.

3. Spray the insides of your mini cupcake pan with baking spray. Spray a teaspoon with baking spray and use the teaspoon to drop and press the mixture into the pan. Fill each cup to the top. Use the saran wrap to roll the cereal mixture into balls. If you use your bare hands the mixture will stick and not form a ball.

5. Use the saran wrap to press the cereal balls onto the filled cups. Mold as desired. Be sure to press down firmly so that the top and bottom stick.

End result, this should taste delicious! I wanted to frost these little suckers to make them look more like cupcakes, but I’m trying to avoid diabetes at least until I’m 30.
